Raspberry Chia Jam

Sweet, tangy, and oh-so-simple! 🍓✨
This homemade raspberry chia jam is the perfect spread for a healthy twist on your favorite snacks.
It’s insanely delicious on my almond flour bread too! 🍞
No refined added sugar, just pure deliciousness!
Raspberry Chia Jam
Ingredients:
8 oz fresh or frozen raspberries (about 1 cup) other berries or mixed berries can be used too.
1/2 teaspoon fresh lemon juice (just a quick squeeze)
1 tablespoons sweetener of choice (I used zero carb monkfruit but raw honey is good too- adjust to taste)
1 tablespoon chia seeds
Instructions:
1. Prepare the Fruit: Place the fruit, lemon juice, and sweetener in a small saucepan over medium-high heat. Simmer on low for about 10 minutes until the mixture bubbles and the fruit starts to break down to your desired consistency.
2. Add Chia Seeds: Remove the mixture from heat and stir in the chia seeds until well combined. Let it sit for at least 15 minutes to allow the chia seeds to gelatinize.
3. Refrigerate: let thicken. Store the jam in the refrigerator for a few hours. This jam will keep in an airtight glass container in the refrigerator for up to 10 days.
