Chicken and Tomato Puffs


You just have to make these! They are really that good! They’re perfect for dinner with a salad or a fabulous appetizer. Either way, you will not be disappointed!



Chicken and Tomato Puffs

Ingredients:

1/2 lb diced chicken breast

4 oz Cherry tomatoes (halved) about 3 halves per puff)

2-3 tablespoons red onion diced

Boursin cheese 5.3 oz (caramelized onion & herbs)

1/2 cup mozzarella cheese

Trader Joe’s Salute seasoning (optional but suggested)

Dried oregano

1 egg (for egg wash)

1 puffed pastry

Fresh basil

Directions:

Preheat oven to 400 degrees.

Add a drizzle of olive oil to a pan. Add diced chicken breast, sprinkle with TJ’s Salute seasoning, salt and pepper to taste and cook until almost done, about 3-5 minutes). Add tomatoes, red onion and cook until tender.

Roll puffed pasty put just to even out and cut into 6 sections. Spread Boursin cheese. Add chicken mixture and top with mozzarella cheese. Pinch two corners to seal each puff. Give each puff a little egg wash, sprinkle with oregano and bake 400 about 20 minutes until puffs are golden brown. Top with fresh Basil.
