This Apple Cinnamon Skillet Bake is made with wholesome oats, protein-rich eggs and protein powder, crunchy walnuts, and a touch of natural sweetness from maple syrup. It’s warming, gut-friendly, and perfect for crisp fall mornings.



Ingredients (Serves 4)

• 2 medium apples, thinly sliced

• 1 tbsp avocado oil

• 1 tsp cinnamon

• ¼ tsp nutmeg

• 2 tsp pure maple syrup (optional)

• 1 cup rolled oats (gluten-free if needed)

• 1 scoop vanilla protein powder (about 30 g)

• 1 cup unsweetened almond milk

• 2 large eggs (or flax eggs for vegan)

• 1 tsp baking powder

• 1 tsp vanilla extract

• Pinch of sea salt

• ¼ cup walnuts, chopped



Instructions

1. Preheat oven to 350°F.

2. Heat avocado oil in a 10” oven-safe skillet over medium heat. Add apples, cinnamon, nutmeg, and maple syrup. Sauté for about 5 minutes, until softened.

3. In a mixing bowl, whisk together oats, protein powder, almond milk, eggs, baking powder, vanilla, and salt.

4. Pour the oat mixture evenly over the apples in the skillet.

5. Sprinkle walnuts on top.

6. Bake for 20–25 minutes, until golden and set.

7. Serve warm, plain or with a dollop of Greek yogurt or a drizzle of almond butter.
